A Pocket Full of…Potatoes?!

Ring-around-a-rosey…a Pocket-full-of-posies…My kids were humming this the other day and it inspired this next recipe.
So, remember the Master Bread Recipe from a couple posts back? We are going to use that one for this one, as well.

~Serves~ 6

Food Stuffs:
Half of the prepared bread dough- Cut into golf ball sized balls (you really should refrigerate the dough for this)
3Cups of Golden Potatoes – Cubed and boiled until they are fall-off-the-fork tender but not mushy
1Med purple onion- Chopped and browned up with the meat
1/2Cup Chopped pepper- Red, orange, green or yellow…you choose your favorite…also cooked with the meat
1 Med butternut squash- Baked, the flesh removed and the “meat” of the squash all smashed up
1/2lbs Ground Turkey or Beef…you could use ground Pork; but we all know how I feel about that!- Browned
1/2Cup Cilantro- Chopped
Cumin, Salt, Pepper, Garlic and crushed red peppers (optional)
Flour for dusting

*Lightly grease a baking sheet and set the oven to 385 degrees.

Ok, lets get these going! First mix the potatoes, squash and meat mixture in a large bowl. Now add 1.5tsp cumin, about 1tsp of salt (I prefer sea salt for it’s boldness of flavor) 1/2tsp cracked pepper, 1tsp minced garlic and couple shakes of crushed peppers and the cilantro. (Make sure you check your seasoning so that it is to YOUR taste)

Next, lightly dust the surface of your counter. Roll out your dough balls so that they form 1/2in thick and about4in around discs. Once your dough is rolled out, stuff each disc with a spoonful of the stuffing. Wrap the edges up over the filling and pinch them closed. Place them on the baking sheet. Brush with an egg wash (one egg and 1Tbs of cool water all whisked together).

Pop them in the oven for about 35min or until they are golden brown.

I served mine on a bed of chopped greens with some pico de gallo and sour cream(well, we use whole milk yogurt instead of sour cream).

The kids LOVED them! I loved them because they were very low in fat and super packed with flavor. I used the squash instead of cheese and my kids didn’t care that they were eating peppers and onions because they were all mixed up in the filling.
Recommended beverages: Spicy Margaritas:
2oz tequila (Partida Silver), 1 oz cointreau, 1 oz agave nectar (after diluted 1:1 with water), juice of one lime (FRESH) a couple of slices of the serrano peppers and a dash of orange juice. place in shaker with crushed ice, shake and strain into salt rimmed glass over fresh ice. garnish with half of a serrano (length wise) salted. **I took this from my friend’s Facebook page and claim no rights to the recipe** But it is awesome!!!
